This is my thing where I post every Wednesday about something mundane that has delighted me this week.
How come people don’t talk about leftovers more?
There’s so much to love about them.
- They give us more time to do things other than cook and clean the kitchen
- They often taste better the next day (think curries and soups and skillet pizza leftovers or just eat it cold you weirdo…whatever)
- They save money
Okay, that might be it. But still…isn’t that enough? The benefits clearly outweigh the risks (what risks?) in my eyes. Leftovers, you are enough for me.
On Sunday night, I made this ginger sweet potato coconut milk stew and it was delicious. It was also delicious (arguably about 9.4% more delicious) for dinner on Monday, after a long clinic day, on a night when I really didn’t feel like cooking.
I served it with store-bought naan and coconut La Croix (I’m sorry).
